Well for starters, we at Twice Cracked Coffee, specialize in made to order coffee, whether you want whole bean or ground coffee, we can do it for you. At Twice Cracked Coffee, we don’t make big batches of coffee, we make single batches, as ordered by you, the customer. So you can be guaranteed that your coffee is (days old) not months old. We start from imported, recently harvested raw coffee beans from all over the world*, Brazil, Colombia, Costa Rica, Ethiopia, Guatemala, Honduras, Kenya, India, Indonesia, Mexico, Nicaragua, Papua New Guinea, Tanzania. *We are not limited to only those offerings, coffee is an open traded commodity, and therefore our selections do vary and change at times due to availability of the product, and world market fluctuations.

We get asked that question a lot. We hand select and sample all of our coffees before they ever hit the market place. From the very beginning of this company, we made the decision to choose only the highest quality coffee beans from "Top Lots" and price them at very competitively low prices. We make our coffees very affordable to all consumers.
As coffee roasts get darker, they lose the origin flavors of the beans and take on more flavor from the roasting process. Lighter roasts have more acidity than darker roasts. Light roasted beans are dry, while darker roasts develop oil on the bean surface. The caffeine level decreases as the roast gets darker
We only specialize in "Single Origin Coffee Beans" Which means we purchase only from single family owned farms in all regions of the world. These coffee beans are seasonal gourmet coffee beans and only come around once in a lifetime, that is what makes them so unique and far superior in quality and taste then "big box" coffee manufactures.
I don’t think its because they “sell” more, its more so because in order to stay profitable they must purchase lower quality coffee beans at bargain prices, think about this, most "big box" coffee manufactures offer coffee on the store shelves for a lot less, and still making a profit, you have to ask yourself, what kind of quality coffee is that? Also called American or Regular roast, this has become the most traditional coffee popular in North America. Increased Acidity, From here, acidity is being roasted right out of the bean. At this point, its replacing pungency is not yet developed, so you will still get a nice, bright coffee flavor. Increased Body, richer in consistency than a lighter roast. Increased aroma more developed than in a lighter roast. Peak complexity,flavor oils captured in the center of a coffee bean have made more of their way to the surface of the bean, releasing the bean's naturally complex coffee flavor.
Medium roasted coffees are medium brown in color with more body than light roasts. Like the lighter roasts, they have no oil on the bean surfaces. To reach the level of a dark roast, coffee beans are roasted to an internal temperature of 240°C (464°F) about the end of the second crack or beyond. They are seldom roasted to a temperature exceeding 250°C (482°F), at which point the body of the beans is thin and the taste is characterized by flavors of tar and charcoal. Dark roasts go by many names. As a result, buying a dark roast can be confusing. Some of the more popular designations for a dark roast include, Italian Roast, Continental Roast, New Orleans Roast, and Spanish Roast. Many dark and even darker roasts are used for espresso blends.

Compared to lighter roasts such as the medium roast coffee, known for caramel notes, or cinnamon light roast coffee, which is highly acidic, French roast coffee is far less acidic and very roasted in flavor. It often has a charred, charcoal-like note. Very dark roasts like French roast completely overpower the flavor and aroma nuances of the coffee beans themselves. That makes it nearly impossible to taste much of the origin or coffee varietal of the beans.

"Before I set sail, I always make sure I have some of Twicecrackedcoffee.com’s coffee in my galley!! My favorite is their Costa Rican, and there Panamanian coffees. I have tried many of their coffees from dark to light, they all seem to good, And at their cheap pricing, you can afford to experiment with all their coffees.
